Cream Cheese Cherry Dessert

For my grandma's birthday we had her and my cousin (with his g/f) over to Mom's house. As usual, Mom was in charge of dinner and I handled the dessert. The week before we'd gone to a baby shower where my aunt made this awesome cream cheese/cherry/blueberry dessert. Well she took too long to email me the recipe so I found one similar at Cooks.com.

CREAM CHEESE CHERRY DESSERT
1/2 c. graham cracker crumbs
3 tbsp. butter, melted
1/4 c. sugar
1/2 tsp. cinnamon
FILLING:
1 (8 oz.) pkg. cream cheese
1 c. powdered sugar
1 tbsp. milk
1 (8 oz.) container Cool Whip
1 (21 oz.) can cherry pie filling
Melt butter and combine with graham cracker crumbs, sugar and cinnamon. Pat in a 9 x 13 inch pan. Refrigerate crust while preparing filling. Combine cream cheese, powdered sugar, and milk. Beat until smooth. Beat in Cool Whip. Spread evenly over graham cracker crust. Refrigerate until cool. Spread cherry pie filling over top. Chill.

I found that this recipe would really fit better in an 8 x 8 pan. I doubled the crust and the filling for a 9 x 13. I could have actually tripled the filling if I'd had the ingredients. Aside from the pan size problems, the dessert was super easy to make and tasted fantastic! I did half of the pan with cherry pie filling and the other half with blueberry pie filling. It turned out looking like something fitting for the 4th of July.I only got the one photo of it...and of course forgot to take one after it was cut. Yes, 1 blueberry got away from me. :)

I made CANNOLIS!

My favorite dessert ever has got to be cannolis...especially the chocolate chip kind. Well we ended up having a late Father's Day for my grandpa since he was out of town on the actual day and I was in charge of dessert. I found an awesomely easy looking recipe at Hungry Girl and had to try it. I made it exactly as she has it written only mine made 8 not 6.
They ended up being a huge hit, everyone loved them. I can't wait to make them again.

Oatmeal Raisin Cookies

Time to actually update this thing!

A few weeks ago my dad fell at the boat launch (shouldn't have been trying to launch the boat by himself, but he's impatient and just couldn't wait for me) and broke a rib. Yep, just 1, but still. He's too old to be doing this silly things by himself.
Anyways, I made him some oatmeal raisin cookies with walnuts (one of his favorites) to make him feel better. I got the recipe from Smitten Kitchen. Basically it's the recipe off the Quaker Oats container but with a few hints and extras. One thing that I found super helpful was the note on refrigerating the dough before baking. I'd had trouble in the past with having my oatmeal raisin cookies turn out super flat. Cooling the dough helped a TON. Not only did they look good, but I liked them (not my fav. usually) and Dad loved them!

Moved in

Well, it is Sunday @ 6:34PM and we are moved into our new house! It only took about 4 hours to load the truck, drive, and then unload the truck due to all of the fantastic help we have.
Now my house is a disaster! There is stuff everywhere. Worse even, is that it is 85+ degrees outside and we don't have A/C. This summer has been beautiful and in the 70's...until this past week. I'm done with 80-90 degrees and humid.
